Garlic, Onion & Paprika-Infused Strip Steak

Ingredients

2 piece 12-ounce strip steaks, at least 1-inch thick
1 Food Prep
Season your steaks well on both sides with either your favorite seasoning or kosher salt.
Remove your steaks from the fridge 20 minutes before cooking.
2 Grill Prep
Fuel: CHARCOAL: We recommend Kingsford® Original Charcoal Briquets.
Temp: 375°F (Medium Heat)
PELLETS: We recommend Kingsford® Grillmaster’s Choice Hardwood Pellets.
Temp: 275°F
Amount: 1 to 2 lb.
Method: Charcoal: Two-Zone Method
Carefully hold your hand about 5” to 6” above the grate, and refer to the temperature settings below:
• High Heat (450° to 550°F):
2 to 4 seconds
• Medium Heat (350° to 450°F):
5 to 6 seconds
• Low Heat (250° to 350°F):
8 to 10 seconds
Make sure your clothing doesn’t touch the grate, and always move your hand away from the heat before you feel discomfort.
When you’re at temp, put cooking oil on a folded paper towel. Grab the oiled paper towel with long-handled tongs and oil the grate thoroughly.
3 The Cook
On a Charcoal Grill
When you’re at temp, put cooking oil on a folded paper towel. Grab the oiled paper towel with long-handled tongs and oil the grate thoroughly.
Place your steaks onto the indirect or cooler side of the grate and close the lid. Cook your steaks over indirect heat until they reach an internal temperature 145° F, approximately 20-25 minutes.
- To finish and add grill marks, lift the grate and use a poker or tongs to stoke the coals and increase the heat.
Replace the grill grate and place the steaks directly over the coal side of the grill for 1 minute, then make a quarter turn (45 degrees) and cook for 1 more minute to create the cross grill marks. Allow your steaks to rest for 5-10 minutes before serving.
On a Pellet Grill
- Place the thermometer probe into the thickest part of your steak, and position it at the center of your pellet grill.
Prepare for a 45-60 minute cooking time, depending on the thickness of your steaks. Smoke your steaks until their internal temperature reaches 145° F.
To finish and add grill marks, remove your steaks once they reach an internal temperature of 145ºF and rest under foil. Place aluminum grill grates into the grill, and increase the temperature of your pellet grill to 500° F.
Once at temperature, place your steaks onto the hot grates for 2 minutes, then make a quarter turn (45 degrees) and cook them for 2 minutes longer to create the cross grill marks. Allow your steaks to rest for 5-10 minutes before serving.
